Barley Nicoise Salad

  • 1/2 cup pearl barley
  • 8 ounces green beans, trimmed, cut into 1 inch pieces
  • 4 large leaves of lettuce
  • 1 (6-ounce) bag mixed greens
  • 2 (6-ounce) cans white tuna, drained
  • 2 roma tomatoes, diced
  • 1 small (2 1/4-ounce) can sliced black olives
  • 4 hard-boiled eggs, cut into wedges
  • 2 green onions, sliced
  • 1/4 cup toasted sunflower seeds
  • 1/2 cup Marie’s Lite Chunky Blue Cheese Dressing
  • 1/2 cup Marie’s Italian Vinaigrette


Cook barley according to package instructions. Drain and cool. Cook green beans in boiling water for 10 minutes. Drain and cool.

Place one lettuce leaf on each of six plates. Put mixed greens in center of each plate. On top of greens, arrange the barley, green beans, tuna, tomatoes and olives. Garnish with egg wedges, green onions and sunflower seeds. Mix Marie’s Lite Chunky Blue Cheese Dressing and Marie’s Italian Vinaigrette; serve dressing mixture on the side of each salad.
