Marinated Chicken Sandwich

  • 2 boneless, skinless breasts of chicken
  • ¼ cup Marie’s Basil Pesto Vinaigrette + 2 tablespoons
  • 2 large deli rolls
  • 4 slices fresh tomatoes
  • 20 baby spinach leaves


In medium bowl, marinate chicken breasts with ¼ cup Marie’s Basil Pesto Vinaigrette and chill for 1 hour. Preheat grill or grill pan to medium high heat. Place marinated chicken on hot grill and cook for 5-7 minutes on each side, turning once. Slice and brush each deli roll with 1 tablespoon of Marie’s Basil Pesto Vinaigrette. Add grilled chicken, sliced tomatoes and spinach leaves to complete sandwich.
