Blue Cheese Portabella Mushroom Caps

  • 12 small portabella mushroom caps
  • 1 cup diced tomatoes
  • ½ cup chopped scallions
  • ½ cup blue cheese crumbles
  • ¼ cup bacon crumbles
  • ½ cup Marie’s Lite Chunky Blue Cheese Dressing


Spritz mushroom caps with olive oil spray and place on a foil-lined baking pan. In a small bowl, combine tomatoes, scallions, blue cheese and bacon, plus salt and pepper to taste. Spoon mixture into mushroom caps. Bake for 15 minutes. Serve with a dollop of Marie’s Lite Chunky Blue Cheese Dressing on each mushroom cap.
