Super Blue Pear & Pork

  • 1 pork tenderloin, about 1 pound
  • Salt and freshly ground pepper
  • 1 tablespoon olive oil
  • 1 (6-ounce) bag baby spinach
  • 2 pears, ripe, cored and cut into 8
  • 1/3 cup walnut halves, toasted
  • 1/4 cup dried cherries
  • 1/2 cup Marie’s Super Blue Cheese Dressing


Preheat oven to 425ºF. Season pork with salt and pepper. Heat oil in large ovenproof skillet over high heat. Pan-sear pork until golden brown on all sides.

Add pears to pan and place in oven.

Place pan in oven and finish roasting until internal temperature of pork which you will tell by using a probe thermometer registers 155ºF. Remove from oven, tent with foil and let rest for 5 minutes. Cut pork into thin slices.

Divide spinach between four plates. Top each plate with pear and pork slices; garnish with walnuts and cherries. Spoon Marie’s Super Blue Cheese Dressing over salads.
