Lite Ranch Potato Skins

  • 8 small baking potatoes, baked and cooled slightly
  • ½ cup crumbled bacon
  • ½ cup shredded cheddar cheese
  • ½ cup Marie’s Lite Creamy Ranch Dressing
  • Chives to garnish


Bake pierced potatoes for 1 hour at 400º F.  Remove from oven and cool slightly.  Cut baked potatoes in half, lengthwise.  Scoop out potato, leaving a 1/4 inch shell.  Place potato skins on foil-lined baking sheet.  Top each half with cheese and crumbled bacon.  Bake 8 minutes or until cheese melts.  Top with a dollop of Marie’s Lite Creamy Ranch Dressing and serve.  Garnish with chopped chives if desired.
