Beef and Black Bean Nachos

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained
  • 1 bag corn tortilla chips
  • ½ cup sliced black olives
  • 1 cup shredded Mexican cheese blend
  • ½ cup Marie’s Creamy Ranch Dressing
  • 1 large tomato, diced


In skillet, brown beef and add taco seasoning according to package directions. Drain off excess liquid and return to medium heat. Add black beans to beef until warm.


To prepare nachos, arrange chips on two large, ovenproof serving plates. Top chips on each plate with ½ of beef and bean mixture and ¼ cup black olives. Sprinkle each plate with ½ cup shredded cheese. Bake at 400º for 5 minutes. Top baked nachos with ¼ cup Marie’s Creamy Ranch Dressing and garnish with diced tomatoes. 


Tip: Ground turkey makes a great substitute for beef in this recipe.
