Pan-seared Salmon on Spinach Salad

  • ¼ cup chopped sun-dried tomatoes in oil
  • ½ cup sliced mushrooms
  • 1 small diced onion
  • 2 tbsp. olive oil
  • 4 salmon filets, skin removed
  • 1 cup Marie’s Spinach Salad Dressing
  • 1 (9 oz) bag baby spinach


Heat oil in skillet on medium high.  Add mushrooms and onions cook until onions are translucent.  Set aside.  In same pan, sear and cook salmon for 3 minutes each side.  Add ½ cup Marie’s Spinach Salad Dressing in final 2 minutes.  In large bowl, pour ½ cup Marie’s Spinach Salad Dressing over baby spinach and gently toss.  Add sun-dried tomatoes, mushrooms and onions and toss.  Divide salad onto 4 plates and top with salmon filets.
