Summer Pinwheel Salad

  • 2 medium tomatoes. thinly sliced
  • 2 ripe avocados, peeled, pitted and cut into wedges
  • 2 cups diced seedless watermelon
  • 1/3 cup Marie’s Balsamic Vinaigrette
  • 2 tbsp. chopped basil
  • Salt and freshly ground pepper


Ring small serving platter with tomato slices. Place avocado wedges in pinwheel pattern inside tomato slices. Pile watermelon in center of avocado wedges. Drizzle with Marie’s Balsamic Vinaigrette and sprinkle with basil, salt and pepper. Serve immediately.

Entrée salad: Add grilled shrimp to salad; drizzle with additional Marie’s Balsamic Vinaigrette.
